Just in time for the football season spiraling down to the Super Bowl, here are two recipes that will know your guys socks off, and a creative way to enter to win some big money and way to use a bag of pork rinds at the same time.

These recipes will be a hit for all football lovers:

Pork Rinds Pizza (lowcarbinmadesimpleblogspot.com)

What is needed:
¼ cup ground pork rinds (I’d suggest flavored pork rinds for a kick in flavor)
¼ cup canned parmesan cheese
1 large egg
1 tsp. Italian seasoning of choice

Preheat oven to 350/ spray tin pan/ mix all ingredients then spread into tin pan, shaping the dough into a pizza pie. Bake 10 minutes or until golden brown. Remove crust from oven. Add topping then bake until cheese melts.

Pork Rind Crusted Chicken Tenders (plainchicken.com)

What is needed:
2 lb chicken tenders
1 (3-3/4 oz) bag pork rinds, finely crushed
1/2 cup panko bread crumbs
1 tsp cajun/creole seasoning or seasoned salt
1/4 tsp black pepper
2 eggs, lightly beaten
2 Tbsp mayonnaise
2 Tbsp water
1/4 cup flour
cooking spray

Preheat oven to 400. Line a baking sheet with non-stick foil. Combine pork rind crumbs, panko bread crumbs, cajun seasoning and pepper in a shallow dish.

Whisk together eggs, mayonnaise and water. Pour into a separate shallow dish.

Place flour in another shallow dish. Dip chicken tenders into flour. Shake off excess. Dip into egg mixture and then coat in pork rind mixture. Place on prepared pan. Lightly spray chicken with cooking spray. Bake for 20 to 25 minutes.

Matched each year with a charitable endeavor, Rudolph Foods will again support the Gridiron Greats Assistance Fund, a nonprofit organization that provides medical and financial assistance to former National Football League (NFL) players in dire need.

Rudolph Foods has also partnered with Billy “White Shoes” Johnson in order to engage football fans and pork rind lovers nationwide through this year’s Pork Rind Appreciation Day-inspired contest. Now through the “big game” on February 4th, 2017, fans are invited to play Gridiron Groovin’, a touchdown dance-inspired game, at PorkRinds.com. There, they will be invited to select various dance moves to create the ultimate end zone dance, a tradition that is always popular with players and fans. This year, Rudolph Foods will join in celebrating the end zone entertainment as well.
